Summer Recipe

Summer Garden Skillet

1 c. flour
1 tsp. salt
1 tsp. pepper
chicken pieces (i buy the frozen chicken breast tenderloins and use about 8 for this recipe)
1/4 cup butter
3/4 c. chicken broth
3/4 c. dry sherry
1 16oz. can artichoke hearts
2 tomatoes, cut into wedges
1 medium onion
1 medium green pepper
other veggies...i've used squash, zuchinni, cucumbers, peas, beans...anything from your garden or favorite summer veggies

Combine flour, salt and pepper in a bag.  shake chicken pieces in the bag.  brown the chicken in the butter, turning once.  reduce heat and add broth and sherry.  cover and simmer 45 minutes.  add vegetables, cover and cook 15 minutes longer.

i've served this over rice, but you could definitely serve in over a salad as well.  my kids and my husband love this dish!
